Marine oils are notoriously difficult to incorporate into nutritional formulations due to their high susceptibility to oxidation and rancidification. Oxidation adversely affects nutritional value, aroma, and taste.

There is growing evidence that the oxidation level of the essential fatty acids EPA and DHA has an impact on their health value.  Thoroughly established research has concluded that resolution of acute inflammation is an active process, not just passive termination of inflammation. Oxidation of DHA and EPA is enzymatically carried out in the cells enabling activation of pathways to attenuate inflammation. It is of importance that the insertion of oxygen is done by the intracellular enzymes “lipoxygenases” to produce the active mediators “resolvins and protectins”.
